WORLD RECORD-BREAKING FEAT BY LEXIS HIBISCUS PD

Two Guinness World Records in one go...such a world-class achievement was chalked up by Lexis Hibiscus Port Dickson (PD), one of Malaysia's premier resorts.
Verified by officials from Guinness World Records on 14 October 2016, Lexis Hibiscus PD is now the proud holder of two Guinness World Records for 'The Most Swimming Pools in A Resort" (it has 643 en-suite pools) and 'The Most Overwater Villas in A Single Resort" (a total of 522 villas onsite).
The resort celebrated its stellar record-breaking feat by hosting an official presentation of the official plaques from Guinness World Records, witnessed by hospitality and tourism industry friends, business partners and the media corp.

Pride and exuberance was obvious from the minute we stepped into the Ballroom foyer as we were welcomed by the resort team, most smiling from ear to ear at the auspicious occasion. In his welcome speech, YBhg Dato' Haji Mat Hassan Esa, Chairman of KL Metro Group highlighted how Lexis Hibiscus PD has attracted more than 3.2million tourists from 120 countries to Malaysia and offered plenty of job opportunities to locals.
Deputy Minister of Tourism & Culture Malaysia, YB Datuk Mas Ermieyati Samsudin who read the Minister of Tourism & Culture's speech also lauded the resort for the double record-breaking achievements and called on individuals and corporate companies to emulate Lexis Hibiscus PD's stellar success.
According to Mr Swapnil Dangarikar, the representative from Guinness World Records, the process to determine and ascertain such unique property developments takes time and applicants need to fulfill strict criteria set by the Guinness World Records organisation.
Bursts of enthusiastic applause broke out when the ceremonial presentation of the Guinness World Records official certificates and plaques commenced. Managing Director of KL Metro Group, YBhg Dato' Low Tak Fatt and President of Lexis Hotel Group, Ms Mandy Chew Siok Cheng were present to receive the certs and plaques on behalf of the resort.
Heartiest congratulations to the management and staff of Lexis Hibiscus Port Dickson for these double Guinness World Records achievements.

STAY, EAT, PLAY AT LEXIS HIBISCUS (Part 2)

Good food and fine company are part and parcel of weekend getaways...During our recent escapade to Port Dickson, staying at Lexis Hibiscus Port Dickson meant good opportunity to suss out the dining options available on premise.

DINE IN STYLE AT WAVE DINING

At the circular Lighthouse Club building where personalised check-in was held at the Captain Lounge (ground level), brunch and cocktails were dispensed at Wave Dining (2nd level) as detailed in my earlier blogpost: http://www.jommakanlife.com/2016/12/stay-eat-play-at-lexis-hibiscus-part-1.html

Since you're on holiday, we suggest spoiling yourself with the resto's 8-course degustation menu (RM238 per person with a glass of red or white house wine or mocktail). We had the privilege of savouring the menu shown and suffice to say, the various culinary offerings left us smiling from ear to ear.
In the call of duty, we opted to sample everything listed. After our amuse bouche (depicted above), Tuna Tataki with Citrus Soy Dressing set the pace for our culinary journey. Light yet flavourful, the spot-on starter whetted our appetite for more.
Luscious Salmon Pastrami with Toasted Sourdough, Brown Butter & Lemon Cream quickly reeled us in. The dots of citrusy cream was a nice zesty touch to balance the fish's natural oiliness.

Us landlubbers barely protested when the Gazpacho with Scallop appeared. It was the perfect bait to hook us at first sip of the subtly tangy broth.
Faint hints of spices set our palate alight as we dug into the Spicy Seafood Soup. Brimming with lush, bright accents that reminded us of Port Dickson's tropical sunshine and breezy sea surrounds.
Faced with a deconstructed Soft Shell Crab Spring Roll, we realised the seafood-laden menu was indeed a wondrous choice. This speciality alone looked deceptively simple but the textural milieu was imaginative and palate-pleasing.
My dining partner's bundle of Capellini, Crab & Sea Urchin stood up to scrutiny too. Small in portion size but big in the flavour department with a varied medley of textural interests, what's not to like?
No seafood dinner is complete without crustaceans and the subsequent Seared Prawns with Smoked Chilli Salsa & Air-dried Duck managed to hold its own against the earlier surfeit of dishes. We like the on-point smoky chilli salsa which bestowed excellent zinginess to the two grilled prawns.

I relished the Minced Shrimp, Wakame & Crema Di Balsamico tremendously. It was such a refined speciality that aptly demonstrated the shrimps' ethereal sweetness without the aged balsamic vinegar and tiny dollops of wasabi-mayo masking it.
Another show-stopping dish that left an indelible impression was Grouper Confit, Beetroot and Smoked Prawn Butter. A perfect example encapsulating the 'less is more' philosophy, with the ingredients allowing to shine minus unnecessary distractions.
By the time the Salmon, Foie Gras and Red Wine Butter hit our table, I must admit I couldn't appreciate the dish's full-on richness. It was deftly prepared and great tasting but stacked up against the grouper, there was no contest.
Ah, one of the main reasons I love my food reviewing job (besides the eating) is I learn something new occasionally. After our scrumptious Duck Breast with Berry Gastrique encounter, I discovered 'gastrique' has nothing to do with gastric...LOL! According to www.foodrepublic.com, 'gastrique' is a reduction of vinegar and sugar infused with flavouring (liquor) or aromatic (spices or herbs) or in this case, berries. The sauce was meant to bring out the assertive meaty flavour which it did exceptionally well for our main.
We were fast slipping into food coma mode after valiantly meat-ting the Buttery-tender Sous Vide Beef Cheek with Star Anise & Cinnamon doused in enticing beef jus. A bed of mash and some root veggies acted as the solid base on which the slab of beef reclined.
Yet we somehow magically found tummy space to fit in the irresistible serving of Chocolate, Mascarpone Cream & Vanilla Ice Cream. How could we not surrender to this festive-looking platter with chocolate 'soil', assorted berries and creamy loveliness?
If you are partial to nuts like yours truly, the Frozen Nougat with Red Fruit Coulis will melt your resistance to dessert. Luckily it wasn't a huge wedge but ample enough to leave sweet-toothed you on a high. A splash of mildly tart berry coulis helped to temper the sweetness with finesse.

YOKOSO JAPAN AT UMI

UMI is the Japanese word for sea; an apt name for the Japanese resto by the sea at Lexis Hibiscus PD. Located at the main building of the resort, the pragmatic design of the interior includes a show kitchen and a bank of picture windows.
After tantalising our palate with a simple starter of pickled seaweed, the procession of dishes began with a huge platter of Sashimi Moriawase (RM70). Prettily laid out on crushed ice strewn with crunchy seaweed, we had our fill of scallop, sliced salmon, butterfish, octopus and tuna. Fresh and succulent, the raw appeal was palate-pleasing.
Interestingly, the culinary team at UMI was given some creative space to interpret and show their own take on certain specialities. Instead of the familiar pan-fried Japanese dumplings, the Gyoza Kawa No Kani (RM15) were akin to mini pizzas -- delicious discs piled with baked crabmeat and grated cheese.
Dining with the family would never be a problem at UMI as the menu has plenty of choices to satisfy the young and old. We recommend the hearty sushi roll of Uangi Kani Maki (RM70). Crunchy tobikko crowned the vinegared rice and grilled eel roll stuffed with crabstick and cucumber, drawing much praise from us at every mouthful.

A harmonious combination of Japanese soya bean paste and thyme made its tasteful presence felt in the exquisite Gindara Thyme Miso Yaki (RM80). Should the going ever gets a tad cloying for you, nibble on the tart pickled ginger stem and all will be well again.
Fermented barley miso lent complexity and layered on lushness to the teriyaki sauce-basted Chicken Tori Moromiso (RM35). The clever inclusion of such an umami-rich condiment into the ubiquitous sweet-salty cooking sauce worked better than expected, suffusing the juicy chicken fillet with loads of big, bold flavours.
For a failsafe option, you can rely on the resto's perennial crowd-pleasing Tempura Moriawase (RM45). Sheathed in gossamer-light batter, the mixture of prawns and vegetables wouldn't go remiss with the young and old.
Swept up by the current hallyu craze, it was inevitable some influences of K-food found its way into the Japanese food realm too. Zesty kimchi brought a welcome dimension to the dish of sliced beef sautéed with assorted mushroom, creating the speciality of Shitake no Gyuniku Kimchi Tare (RM60). Thin slivers of sweet potato crisps gave the dish crunchy texture.
Sakura denbu - sweetened and fluffy pink dried cod condiment adorned the mound of garlicky Shake Chahan (RM20) to conclude our maiden visit to UMI. Salmon flakes, wispy fried egg and chopped spring onion came together to bestow the plump grains with superbly enticing accents.

The night's sweet closure arrived in the form of a vibrant tasting Mango Pudding with Mango Sorbet. Juicy pomelo sacs and diced fresh mango complete the slurpilicious offering, bringing waves of pleasure to the palate before we called it a night.

STAY, EAT, PLAY AT LEXIS HIBISCUS (Part 1)

Officially recognised by Guinness World Records for having The Most Overwater Villas At A Single Resort, Lexis Hibiscus Port Dickson (LHPD) should be every A-lister's resort of choice. Nestled along Port Dickson's Pasir Panjang shoreline, overlooking the Straits of Malacca, Lexis Hibiscus PD is about 1.5 hour's drive from Kuala Lumpur. A winner of the much coveted World Luxury Hotel Awards, LHPD proves its success is hard earned.

On arrival at LHPD, we were astounded by the spacious lobby, brightly lit with recessed lighting shining onto strands of coral. Plush seating areas offer brief respite for guests staying at the tower block who may need to wait their turn for check-in. Those staying in suites and Panorama Pool Villas are whisked off to the circular Lighthouse Club building for express, personalised check-in.

The resort's 639 pool villas has garnered much buzz since opening. Whether day or night, the main tower block of 117 rooms stands tall, intersecting with clusters of 522 overwater villas that spread out seawards to form the outline of a hibiscus.
We were indeed privileged to be accorded a Panorama Pool Villa (Sea View) during our recent weekend escapade. Each 88 sq.m unit is tastefully outfitted in warm, earth tones; the clincher is the private infinity pool and steam room in addition to a spacious patio with breathtaking, uninterrupted vistas of the sea.

Comfortably furnished with two king beds, an expansive vanity area and bathroom, an executive desk and a sleek wall panel with flatscreen TV, we revelled in the luxurious touches (complimentary WiFi in-room, fresh fruit plate & soft drinks in the mini bar plus nightly turn down service) which made our stay utterly memorable.
Next morning, we woke up before the crack of dawn to catch the sunrise. From our patio, the serenity and seascape laid out by Mother Nature was second to none. I even had time and the sheer luxury of going for a quick dip in the pool.
By the time my dip was done, we were famished. Hitching a ride on the resort's shuttle buggy which plies to and fro at frequent intervals, we sojourned to the Lighthouse Club for a sumptuous brunch (9am-2pm) at Wave Dining.

Service was personable, with the team proffering juices and hot beverages, and a selection of delicious cook-to-order mains. While our main courses were being prep, we sampled assorted housemade breads, yoghurt and overnight oats with chia seeds, preserves (pumpkin kaya anyone?), pastries and coconut milk with sago & pandan panna cotta. The concise but varied mains including a vegan dish should please most palates.
Hubby and daughter were delighted with The American Breakfast comprising grilled herbed sausage, cherry tomatoes & balsamic vinegar, and truffle scrambled eggs with baked beans. Supplemented by toast and little jars of yoghurt and overnight oats, it was a substantial brekkie.
In line with its seaside surrounds, Something Fishy was most appropriate featuring salted fish mash topped with a sous vide egg, cilantro hollandaise salmon trout gravlax on bagel with cream cheese and onion, and spicy crab cakes with wasabi mayonnaise. This was a hefty serving good enough for sharing between two light eaters.
I also enjoyed The Vegan option: barley risotto with scrambled tofu, chickpeas & cauliflower salad with green chilli dressing and roasted onion with sweet potato & black truffle proved imagination can take meat-free dining to greater heights.
We love the encompassing view the circular picture windows accorded and couldn't resist taking loads of snapshots. Another brief buggy ride post-brunch took us to the main building for a tour of the Lexis Hibiscus PD.
According to Lee Meng Hong, Dir of Marcomm, guests of the main block partake their breakfast at Roselle Coffee House, an all-day dining outlet. Lunch, dinner and weekend high tea buffet are served with dishes from around the world; a mixture of East & West specialities.

Nearby is a recreational area where family-friendly activities such as archery and a rollicking yoyo car rides await. You can even rent Segway personal transportation vehicles or bicycles to zoom around the resort while kids can romp at the childsafe playground.

Keen to have a bird's eye view of the Lexis Hibiscus PD? Head over to the Main Lobby where you can sign up for a 5-minute helicopter joy ride (RM250 per person). This has its pull factor as many guests don't mind shelling out for such a rare experience. At the designated time you'd have to stroll over to the Hibiscus Heliport to embark on the helicopter ride.
Let the children burn off some energy at Kidz World where they can climb, slide and crawl through an obstacle-like play area. Budding singers can warble their fave tunes at Starz Karaoke while blissful pampering in the serene oasis of LexSpa is available for ladies and men.
We also had a whirlwind tour of the LHPD special event facilities. One of the outstanding features has to be the unique lighting outfitted throughout strategic public areas. All of them are eye-catching and evocative of the undersea in the form and colours of corals and ocean life.

I won't bore you with the deets but suffice to say, LHPD offers various space solutions suitable for dream weddings, corporate team-building escapades, MICE magic, milestone celebrations and company outings. More info on special events planning available here: http://www.lexishibiscuspd.com/en/meeting

Fans of Asian superstar Jay Chou would be thrilled to know the singer has called LHPD home briefly during his concert in Malaysia last year. He and his family were cocooned in the Presidential Suite, housed at the tip of the hibiscus stigma for privacy. The duplex abode has four bedrooms with ensuite bath, spacious living and dining area as well as a kitchen and bar.

Likewise, the Royal Suite and Imperial Suite are filled with similar fine furnishings and creature comforts. The shutterbugs in us spent some time snapping pixs at every picturesque nook and corner.

At dusk, we headed over to Lighthouse Bar - located on the highest floor of the Lighthouse Club - for canapes and drinks. The large, airy deck accorded us a nice view of the surroundings while we chilled and chatted over a selection of nibbles and tipples.
It was a food-filled weekend for us since the LHPD team hosted two sumptuous dinners - one at UMI Japanese Restaurant and Wave Dining. Deets on our dining experience and the plethora of goodies we sampled will be coming up in a separate blogpost.
