BREAK FAST WITH CULINA BISTRO’S FESTIVE FEASTS

As a restaurant rooted in European classics, Culina Bistro weaves commendable local flavours into its culinary repertoire, befitting the season of Ramadan.



From 23 February to 19 March, the bistro offers two set menus alongside an à la carte selection for buka puasa. The four-course Festive Feast for two (RM198) is a sensible option structured with restraint and balance.

The meal opens with Oxtail Soup, made from Australian oxtail simmered in a lightly spiced broth. Carrot, celery and potato lend natural sweetness and body, while the collagen-rich oxtail is cooked to yielding tenderness.

Roti Jala follows; its lace-like crêpes made to order on the griddle then rolled neatly. Paired with a creamy, aromatic potato curry, the dish offers textural contrast: soft, airy folds against a warmly spiced sauce.

Available at a supplementary charge, appetisers such as Crab Cakes (+RM70), Pandan Chicken (+RM30), Seafood Tempura (+RM50) and Beef Bergedil (+RM50) cater to those seeking something richer or more indulgent to start with.

For mains, choose two main courses from a line-up that reflects Culina’s hybrid identity: Ayam Percik, Beef Pizza, Butter Chicken, Clam Aglio Olio or Prawn Spaghetti.


The Ayam Percik is particularly noteworthy. Using organic, antibiotic-free lacto chicken, the meat is marinated for 24 hours with galangal, lemongrass and a measured blend of spices before being grilled in a Mibrasa charcoal oven. The result is succulent flesh beneath lightly charred skin, with a nice smokiness infused into the spice paste. It's a complete and substantial meal when partnered with nasi jagung (corn rice) and some zesty, crunchy achar (carrot and cucumber pickles).


Handmade fresh to order, the delectable Beef Pizza attests to the kitchen’s grounding in European techniques. 

The crust emerges properly blistered and crisp at the edges, spread with a savoury, slightly piquant sauce. Pepper-crusted beef slices, mushrooms and capsicum are applied with a generous albeit disciplined hand, allowing each component to shine through.

Desserts lean toward familiar comfort with regional nuance. Options include a Pandan Crêpe (+RM10), Flourless Chocolate Cake (+RM28), Kueh Bakar with coconut ice cream, Soft Serve Sulawesi Vanilla (+RM10), or a Dessert of the Day (+RM10).

The Pandan Crêpe is a contemporary riff of kuih ketayap — tender-soft pancake filled with candied grated coconut and cream. Accompanied by coconut ice cream and a scattering of crumbs for texture, it wraps the meal up on a nostalgic yet modern note.

Situated within The Shoppes at Four Seasons Place, the concept at Culina merges gourmet market and bistro with tasteful coherence. Premium meats from Australia, New Zealand and Korea, seafood from France, artisanal cheeses, olive oils and baking provisions are displayed across specialty counters — from butchery to delicatessen. Diners may even select cuts or seafood from the retail section to be prepared à la minute by the Culina team, an approach that underscores transparency and ingredient confidence.

LET’S DO THE SWISS AT CHALET


You know the Chalet Pop Up has returned to EQ Kuala Lumpur when you detect the distinctly earthy-nutty cheesy smell of Raclette Valaisanne in the air. Also present will be original Chalet Restaurant Managers, Azlan Alias and Amerjit Singh Lakha Singh. Both stole the show with their nimble footwork as they demonstrated the vaunted sabayon routine along with younger team members at the recent media preview.
From 29 July to 17 August, get ready to savour classic Swiss-Continental specialities at the upcoming Chalet Pop-up. Once the go-to fine-dining outpost from 1973 until the original Equatorial Kuala Lumpur Hotel closed for redevelopment, Chalet will once again relive its halcyon days by serving its nostalgic culinary gems to loyalists and guests.

We experienced the restaurant’s theatrical table-side presentation with the chef on duty scraping off the melted Swiss raclette cheese on the spot. Served with new potatoes, pickled cornichons and pearl onions, we sighed with satisfaction upon tasting the nutty and creamy Raclette Valaisanne (RM118++). Its nice milky aftertaste and lush richness was balanced by the pickles and baby potatoes.

Cheese lovers mustn’t pass up on Fondue Au Fromage (RM288++ for 2 persons). Scented with truffle, the bubbling pot of savoury Swiss cheese also known as fondue promises an interactive dining experience. Dipping bread cubes into the melted cheese infused with wine makes for a novel, fun-filled experience for the uninitiated.

We also sampled the popular appetiser of Salade De L’Empire Romain (RM78++), romaine lettuce salad flecked with shaved Parmesan cheese, croutons and a sprinkling of diced air-dried beef. Light and refreshing.
Those tasting portions did the trick to whet our appetite, priming us for Crème De Champignons Sauvage (RM68++), Chalet’s signature creamy wild mushroom soup. Served in a crusty and warm bread roll, the salubrious broth brimming with rustic woodsy broth beguiled us to lap everything up.
We also relished every bite of the sumptuous Émincé de Veau à la Zurichoise (RM208++), Zurich-style sliced veal in creamy mushroom sauce. Paired with a generous portion of crusty rosti potatoes to absorb all those rich flavours, we were transported to seventh culinary heaven.
Personally for me, the day's show-stealer was the supremely tender Duck Breast à l’Orange (RM188++). I was completely smitten by the excellent, full-bodied sauce bigarade – a classic Provence (bitter)orange sauce – matched the meltingly tender slices of duck breast. The rich flavours made resisting the dauphine potatoes (baked sliced potatoes with cream and garlic) and pine seed-broccolini impossible.
 
Amerjit wrapped up the lunch sess with his blazing Crêpes Suzette (RM68++), artfully flambéed pancakes in orange juice and Grand Marnier liqueur. The tissue-thin pancakes drenched in the slightly bittersweet boozy-citrusy sauce and complemented by vanilla ice cream was a most befitting finale.

DOUBLE INDULGENCES AT SINFUL SEAFOOD & DESSERT


They say life is short so eat dessert first. Opened in late December 2018, Sinful Seafood & Dessert aims to satisfy the hankerings of local seafood and dessert lovers in one spot.
Furnished like a hipster café, Sinful’s simple and spartan interior treads the fine line between the raw industrial feel of bare concrete walls awash in warm, mellow lighting and the practical modernity of blocky wooden furnishing and dark armchair seating.
True to its name, Sinful’s straightforward menu focuses solely on seafood and dessert. Sweet-tooth enthusiasts should get the ball rolling with the Chocolate Magic Ball (RM29.50) or the Chocolate Crepe (RM20). Both are equally sinful but heck, you only live once so go for a sweet surrender.
A decadent treat no chocoholic should pass up on, the Chocolate Magic Ball is served at the tableside with some flourish. A small jug of warm chocolate is poured over the white chocolate ball — the melted chocolate dissolving the white chocolate ball before completely blanketing the dark, fudgy chocolate cake inside.
We like the thoughtful touch of presenting the ultra-chocolatey treat with a mound of fresh strawberry slices and cream; the burst of tart acidity a welcome counterpoint after that rush of rich chocolatey sweetness. 
Somewhat lighter in texture albeit no less generous on the amount of chocolate used, Sinful’s signature Chocolate Crepe has white, milk and dark Belgian chocolate drenched over it. The top quality chocolate is silky smooth with a lingering finish, making it a heavenly pairing with the paper-thin crepe.


Personally, I prefer the Sinful Fruits Waffle (RM38.50). IMHO, the waffle is hefty enough for sharing. Texture-wise, it’s a light and pleasant canvas to pull the assortment of sliced banana, kiwi, strawberries, pineapple and chocolate together.
More tropical fruits make their presence felt in the Sinful Fruits Pancake (RM28.50). The stack of fluffy soft pancakes came up to mark, layered with chunks of tropical fruits and lashings of chocolate. A creation that’s hard to fault and guaranteed to leave you replete.

Wallet-friendly Seafood Combos are the other headliners at Sinful. Solo and group diners are catered for so you’d find different combos available; from RM22.90 for a Single Combo (for 1 person) up to RM224.80 for a Party Combo (for 10 persons).

Each Seafood Combo consists of deep-fried crispy baby crabs in addition to mussels, squid, prawns, fish and clams prepared in a choice of piquant house-made sauces available: Sinful Signature, Honey Mustard, BBQ, Spicy & Sour, Garlic or Curry. Also part of the meal deal is free flow of Rice, Potatoes, Mashed Potatoes and Coleslaw.
Our top vote goes to Honey Mustard — the subtle mustard zinginess works well to blunt the saucy richness whilst simultaneously enhancing the natural seafood sweetness.
Coming in a close second is the Curry sauce. More delicately spiced like a Japanese curry than a local one, we find it works like a charm with the seafood; suffusing their inherent flavours with rich complexity. 
Savoury-sweet accents are most pronounced in the Sinful Signature sauce. Admittedly, it’s an acquired taste for me personally but some diners may find it float their boat. Give it a shot and decide for yourself since the jury is out on this one.
If you’re working in the vicinity, Sinful offers a wallet-friendly Single Set Lunch at only RM14. Choose from Seafood (with a choice of Curry or Sour-Spicy Sauce) or Chicken Wings accompanied with Rice & Egg and a complimentary drink.
Delectable snacks to stave off hunger pangs while you wait include Chicken Wings (RM10.90, 6pcs) and Chicken Balls (RM10, 8pcs). Both are freshly cooked to order so you can be assured the crowd-pleasers are notable enough to make waiting time bearable or work up the appetite before succumbing to the main attractions.
